Marsh Hen Mill's Carolina Gold Rice Middlins consist of broken and smaller pieces of their Carolina Gold Rice that are produced during hulling and processing. Traditionally, middlins have been used in dishes such as purloo, and various "bogs". They have all the flavor and pedigree of Carolina Gold Rice, but cook a little quicker and are favored for recipes where they will be incorporated more than being served as a stand alone side.
